Akira Back con­sis­tently serves up re­fined Ja­panese dishes in­fused with an in­ter­na­tional mix of flavours. Such is the tuna pizza, where slices of tuna sashimi, slightly driz­zled with truf­fle oil, sit atop a layer of aioli and a crispy pizza base. It’s the per­fect com­bi­na­tion of East and West, and the crispy base makes for a de­light­ful coun­ter­point to the soft­ness of the fish. The rock shrimp tem­pura epit­o­mises the fa­mous slo­gan “once you pop, you can’t stop”. These morsels of fried shrimp come gar­nished with sriracha and melt in your mouth. The grilled Alaskan king crab with dy­na­mite sauce—es­sen­tially a hearty mix of sriracha and may­on­naise—im­presses with its pre­sen­ta­tion, in which the crab­meat needs to be spooned out of its shell cas­ing. The 48-hour San­choku short ribs are sim­ply di­vine: suc­cu­lent, ten­der, and per­fectly fatty and juicy. Ser­vice is prompt and at­ten­tive, even for guests seated at the bot­tom of the multi-level restau­rant.
