They also serve as the perfect backdrop to executive chef Timothy De Souza’s expansive menu, which seems to dip into all kinds of cuisines and cultures. Expect to see diners ordering a feast to share, tucking in with full gusto, and appreciating some of the chef’s best dishes. These include the roasted cauliflower with almond, molasses and Nigella yoghurt, which is perfectly cooked and boasts gorgeous flavours. Also worth noting are the crab salad, which is elevated with the use of pomelo, starfruit and young coconut, and the lovely mango carpaccio, which comprises beautifully ripe mangoes with a hint of vanilla and coconut sorbet—very natural and great for our climate.
