Head chef Shigeru Kasajima’s love for cook­ing be­gan when he baked a straw­berry cake with his mother as a child. It was a pow­er­ful ex­pe­ri­ence that led him to train as a French chef for 14 years, fol­lowed by an­other 17 years as a Ja­panese chef.
