Opened in 1850, Ip­poh Tem­pura is one of Ja­pan’s long­est-run­ning tem­pura restau­rants and it ex­panded to Sin­ga­pore in 2016. It’s run by fifth-gen­er­a­tion chef-owner Masaru Seki, who trained at the pres­ti­gious Tem­pura Ip­poh Edo­bori Hon­ten in Osaka. He pre­serves fam­ily cook­ing tra­di­tions by us­ing seafood from the Tsuk­iji fish mar­ket, pre­par­ing the bat­ter with fresh spring wa­ter from Ja­pan and deep-fry­ing the tem­pura in prime saf­flower oil. $70-100/PER­SON UPON RE­QUEST NO $50/BOT­TLE
