Head chef Lee Hee Min’s culi­nary ex­pe­ri­ence goes back to his child­hood days, when he started work­ing in restau­rants to earn ex­tra money. Dis­cov­er­ing his pas­sion early on, he trained un­der Can­tonese chefs at the now-de­funct Re­gency Palace and Mouth Restau­rant be­fore com­ing into his own to helm Peony Jade at Clarke Quay since 2010.
