Head chef Lee Hee Min’s culinary experience goes back to his childhood days, when he started working in restaurants to earn extra money. Discovering his passion early on, he trained under Cantonese chefs at the now-defunct Regency Palace and Mouth Restaurant before coming into his own to helm Peony Jade at Clarke Quay since 2010.
