Head chef Lee Hee Min’s culinary experience goes back to his childhood days, when he started working in restaurant­s to earn extra money. Discoverin­g his passion early on, he trained under Cantonese chefs at the now-defunct Regency Palace and Mouth Restaurant before coming into his own to helm Peony Jade at Clarke Quay since 2010.
