Ex­ec­u­tive Chi­nese chef Mok Kit Ke­ung is an in­sti­tu­tion within the Shangri-la group, hav­ing helmed two-miche­lin­starred Shang Palace in Hong Kong and now its branch in Sin­ga­pore. He boasts more than 35 years of ex­pe­ri­ence in tra­di­tional Can­tonese cui­sine and is known for adding nour­ish­ing in­gre­di­ents in his dishes, such as the steamed lob­ster and bird’s nest with crab co­ral sauce, and the sautéed bone­less chicken wings skew­ered with abalone and mush­room.
