Executive Chinese chef Mok Kit Keung is an institution within the Shangri-la group, having helmed two-michelinstarred Shang Palace in Hong Kong and now its branch in Singapore. He boasts more than 35 years of experience in traditional Cantonese cuisine and is known for adding nourishing ingredients in his dishes, such as the steamed lobster and bird’s nest with crab coral sauce, and the sautéed boneless chicken wings skewered with abalone and mushroom.
