The caramelise­d meat is cooked tender and coated with a deliciousl­y sweet sauce that balances perfectly with the rich flavour from the meat. Another restaurant classic, the stewed bird’s nest with egg white, crabmeat and superior soup is a musttry. The robust broth is delicious and elevated by the sweetness coming from the generous chunks of crabmeat and bird’s nest—a showcase of such delicate balance and sophistica­tion in one dish. For a main dish, try the wok-fried beef tenderloin with black garlic sauce and shiitake mushroom. Prepared using the traditiona­l Chinese wok-frying method, the beef is tender and retains the flavour from the delicious fragrance of the garlic sauce and mushrooms.
