Omakase-style dining by an inspired Spanish chef ensures innovative meals. Daily specials may include watercress soup with delicate smoked eel parfait, wakame and red ikura, to stimulate the taste buds. Crisply fried sonso fish, artfully arranged over a sous vide organic egg, is sprinkled with caramelise­d onion and small, spicy chorizo cubes. The pairing of smoky, salty pork jowl, smoked yoghurt, baby spinach and garlic sprout is pleasantly wellbalanc­ed, as is the dish of shiso leaf, Spanish sea cucumber, tamarind granita and potent umeshu jelly. There are Spanish wines among others on the list, as well as an extensive sake collection. The staff are knowledgea­ble should you need a recommenda­tion.
