The chilli pomelo crab deserves all the praise it has been garnering since its introduction in 2013. There’s much to love about it, from the beautifully cooked Sri Lankan crab to its flavourful gravy, which boasts a balanced contrast of sweet and savoury flavours and just the right amount of heat, piqued by the clever addition of pomelo sacs for added tang. A similar show of skilled restraint can be found in the wok-fried Kagoshima wagyu beef and its punchy peppercorn sauce, which isn’t overpowering, allowing the tender and naturally flavourful prized beef to shine. If the weather permits, an al fresco table is recommended.
