These include the beautifully marbled and expertly grilled Blackmore striploin, which seems to dissolve in the mouth, and the tenderloin, enhanced with burnt caramelised onions and buttery bone marrow. You don’t need any additional sauces, but sides of acerbic butterhead lettuce, shallots with a lovely vinaigrette dressing, and burrata tossed with fennel and orange, give the meal some welcome variety.
