Spiced octopus tentacle, meaty and tender, is recommended for its natural sweetness and crunch, and is served with lemon potato, radish and savoury bottargo mayonnaise. The rice-shaped pasta called risone, complemented by octopus morsels braised in red wine, is luxuriously rich with the distinctive addition of bone marrow, which is soaked up elegantly by the pasta. The ravioli is filled with juicy, compact red prawns and black truffle, then dressed with soft, creamy burrata sauce.
