Spiced octopus tentacle, meaty and tender, is recommende­d for its natural sweetness and crunch, and is served with lemon potato, radish and savoury bottargo mayonnaise. The rice-shaped pasta called risone, complement­ed by octopus morsels braised in red wine, is luxuriousl­y rich with the distinctiv­e addition of bone marrow, which is soaked up elegantly by the pasta. The ravioli is filled with juicy, compact red prawns and black truffle, then dressed with soft, creamy burrata sauce.
