This restaurant is bathed in pale green hues that are offset by sculptures, lanterns and delicately colourful artwork, providing a serene ambience in the heart of the central business district. Enjoy the crispy roasted pork belly for its combinatio­n of delicate meat, layer of fat and golden crackling. The doubleboil­ed dried seafood in superior broth, laden with collagen, contains delicacies of sliced abalone, sea cucumber and fish maw in a satisfying and comforting bowl of goodness. In another signature dish, twirls of chewy, tender simmered egg noodles meet succulent Boston lobster, its fine sweet flesh accentuate­d by rich, spicy XO chilli sauce. Jade’s almond ice dessert is a treasure trove of jade-green wheatgrass jelly, gingko nuts, lotus seeds, lily buds, white fungus, dried longans and almond cream, making for a delightful­ly memorable finale. Chinese wines are included on the adequate wine list.
