Seafood dishes such as the Japanese madai served cevichesty­le and the coral trout with white asparagus and yuzu sabayon are bright and light. Even as the meal progresses to meaty dishes like the smoked quail and the extremely well-cooked beef short rib, these prove to be well-balanced and never feel heavy. The poached strawberry, served with a lovely pistachio parfait, is a delightful dessert that circles the meal back to its fresh beginnings. Choose the counter seats, which offer direct interactio­n with the chefs. They’re knowledgea­ble and give excellent introducti­ons to every dish they serve.
