It’s evident in the camphor tea-smoked duck, which boasts a browned and crisp skin that complements the smoky and succulent meat; the reliable staff even offer to wrap them in pancakes for guests. The Min Jiang deluxe platter shows the chef’s creative side, with offerings such as the chunky lobster medallion coated with salted egg yolk atop compressed watermelon, and the prawn mousse scallop stuffed with green ginger sauce. Min Jiang does delicious soups, too, especially the doubleboiled Song fish-head in a bubbling superior stock broth that’s milky and flavoursome— perfect on a rainy day.
