The chefs focus on what’s most important—honouring fresh ingredients flown straight from Japan. At the time of our visit, the 15-course omakase Miyabi menu featured cooked dishes and nigiri sushi including kasugo (baby sea bream) and nodoguro (black-throat sea perch) alongside crowd favourites such as otoro, uni and hotate.
