The pride and joy of this modern Australian barbecue joint is its gigantic fourtonne, dual-cavity oven and its multiple grills, where mouth-watering meats are executed to perfection. In anticipation of a hearty meal, start with the refreshing Washington oysters, which are sweet, salty and full of umami goodness. Another must-try is the smoked quail egg and caviar, which has an interestingly chewy texture on the outside, while the inside is bursting with incredible flavours. The mayura cube roll, served medium-rare, is juicy and dressed simply with a side of greens.
