The only aquarium-restaurant in Singapore cares for our planet through the food it serves. Under the helm of chef de cuisine Minwoo Yun, the restaurant uses only sustainabl­y sourced seafood, some of which are from local fish farms, or line-caught from New Zealand, Chile and Norway. These are reimagined into dishes like the seared sea bass with cauliflowe­r, baby squid and clams (served in set menus).
