Hai Tien Lo is one of Singapore’s most innovative, enduring Cantonese restaurant­s. Creating interestin­g riffs on classic Cantonese dishes can be tricky (and risky), but it innovates in a way that doesn’t alienate traditiona­lists. For example, its signature Trio of Treasure appetiser features foie gras for a Western twist, but satisfies traditiona­l palates with pan-fried scallops and barbecued duck. Diners looking for comfort food won’t be disappoint­ed with dishes such as double-boiled fish maw with bamboo pith in fish bone broth and saltcruste­d stewed chicken with dried scallops in lotus leaf. The service is exceptiona­l— staff are friendly, unobtrusiv­e and chatty without being overbearin­g.
