It’s been four years since chef-owner Kenjiro “Hatch” Hashida set up Hashida Sushi in Singapore—and it remains one of our top places for an authentic sushi experience. He and his skilled chefs take diners on a gastronomi­c journey through an omakase menu that highlights Japan’s seasonal produce (such as the sweet ayu fish) and ingredient­s, presented alongside signatures like the utterly tender ankimo (or fish foie gras) that literally melts in the mouth with one bite, and the otoro nigiri with its clean, delicate flavours. Halfway through the meal, the chef presents one big piece of tuna, which he expertly carves into thin slivers in front of you, served with soy sauce and freshly grated wasabi. It’s not only the stellar meal that makes the trip memorable; the staff take the Japanese art of omotenashi to heart by treating everyone like VIP guests—from the warm and friendly welcome upon arrival to the regular top-up of your sake or tea and the meticulous way they present each dish.
