For refined and delicious Sichuan and Cantonese cuisine with a splendid 60th-floor view of the CBD and Marina Bay, this restaurant has few rivals. For an appetiser, the Chongqing chilled chicken with spicy bean paste features poached and chilled chicken that’s tender, succulent and smooth; it’s paired with a tasty bean paste that’s set ablaze by ground Sichuan chilli peppers. The stir-fried beef with sliced garlic is aromatic and expertly fried; every cube of beef is tender, juicy and filled with smoky, well-seasoned flavours. Beijing roast duck at this restaurant is served in two styles. The flesh and skin of the duck is wrapped in a pancake parcel filled with spring onion and sweet sauce, while the rest of the meat in the duck is minced, seasoned, fried and then served to be wrapped in lettuce leaves. For desserts, the homemade fine tofu with wolfberry is silky-smooth and lightly sweetened, so as not to detract from the fine, subtle flavours.
