The steamed chicken is succulent and fragrant, complemented by crunchy ginger and shallots; this dish is slightly oily and salty, so it’s best eaten with rice. Served in a clay pot, the spiced vermicelli on a bed of four goose webs boasts a strong flavour of peppercorn that can be slightly overpowering—but the texture of the dish is perfect, with the vermicelli springy and the goose webs chewy, despite the bones. Another standout is the Boston lobster, infused with fragrant ginger and shallots and served on a bed of braised noodles.
