The Menu Appetit—a set where you can choose your appetisers, mains and desserts—is ideal, but you can also splurge on a couple more items from the Tasting and à la carte menus. Standouts include the La Roseval (pig trotter with Roseval potato) from the former, and a starter of spaghetti in a sauce of Hokkaido sea urchin and a softboiled egg from the latter. For the mains, the classicall­y prepared free-range quail and foie gras is far more satisfying than a rather guileless choice of a whole Maine lobster, cooked on the teppanyaki grill and served with romesco sauce.
