Creativity is the name of the game at Lewin Terrace. Chef Keisuke Matsumoto wields magic in his seasonal set menus, such as the eight-course Wakon Yosai Summer menu, where he put together the perfect harmony of delicate Japanese flavours and rich French cuisine. Like a symphony, the dishes build up to the final two courses. The penultimate of those is the amadai (tilefish), a classic that’s tweaked each season—here, the scales are fried rather than removed, forming a crunchy-crispy texture juxtaposed with the tender flesh. The final savoury dish features succulent Miyazaki wagyu beef, rich with the aroma of smoked herbs, that’s a hearty finish to the meal.
