The Peony Jade at Keppel Bay have won numerous awards, but the outlet at Clarke Quay is no slouch, either. The menu introduces some unusual twists on the usual Chinese fare. The Szechuan mapo tofu replaces the soft white silken tofu cubes with one large rectangular piece that has been pan-grilled to crispy perfection on each side; when you cut into it, the characteristic saltyspicy red sauce spills out onto the plate. The stir-fried cod fillet on crispy guoba rice is also a delight. The cod is expertly prepared and has an almost buttery mouthfeel that’s nicely complemented by the crispy rice.
