Princess Terrace is set in an unpretentious environment in the lobby of Copthorne King’s Hotel, with minimal place settings and a boisterous ambience. Here, the chicken curry with sticky yellow rice is particularly hearty and delicious; the curry is thick and unctuous, while the chicken falls off the bone. The broth of the Penang assam laksa is more watery than Singaporeans are normally used to, but is refreshing and flavourful, with the sour-sweet tang of tamarind and the spicy hit of sambal belacan satisfying the taste buds. The spread of traditional Penang nonya kueh is wide, and the pastry chefs show restraint in terms of the kueh’s sugar content.
