Fresh oysters served with lemon and mignonette are always a great way to start a meal. The Tajima wagyu flat-iron steak here is slightly gamey, so if you’re not into that, opt for the dukkah-crusted Australian lamb cutlet—braised shoulder with spiced eggplant, labneh and sumac. This cut is brimming with spices that put a unique twist on the traditional rack of lamb. End things with the liquorice parfait (albeit an acquired taste), which is well-balanced, as is the chabichou, a firm and creamy unpasteurised cheese made from goat’s milk.
