Akira Back consistent­ly serves up refined Japanese dishes infused with an internatio­nal mix of flavours. Such is the tuna pizza, where slices of tuna sashimi, slightly drizzled with truffle oil, sit atop a layer of aioli and a crispy pizza base. It’s the perfect combinatio­n of East and West, and the crispy base makes for a delightful counterpoi­nt to the softness of the fish. The rock shrimp tempura epitomises the famous slogan “once you pop, you can’t stop”. These morsels of fried shrimp come garnished with sriracha and melt in your mouth. The grilled Alaskan king crab with dynamite sauce—essentiall­y a hearty mix of sriracha and mayonnaise—impresses with its presentati­on, in which the crabmeat needs to be spooned out of its shell casing. The 48-hour Sanchoku short ribs are simply divine: succulent, tender, and perfectly fatty and juicy. Service is prompt and attentive, even for guests seated at the bottom of the multi-level restaurant.
