Opened in 1850, Ippoh Tempura is one of Japan’s longest-running tempura restaurants and it expanded to Singapore in 2016. It’s run by fifth-generation chef-owner Masaru Seki, who trained at the prestigious Tempura Ippoh Edobori Honten in Osaka. He preserves family cooking traditions by using seafood from the Tsukiji fish market, preparing the batter with fresh spring water from Japan and deep-frying the tempura in prime safflower oil. $70-100/PERSON UPON REQUEST NO $50/BOTTLE
