Opened in 1850, Ippoh Tempura is one of Japan’s longest-running tempura restaurant­s and it expanded to Singapore in 2016. It’s run by fifth-generation chef-owner Masaru Seki, who trained at the prestigiou­s Tempura Ippoh Edobori Honten in Osaka. He preserves family cooking traditions by using seafood from the Tsukiji fish market, preparing the batter with fresh spring water from Japan and deep-frying the tempura in prime safflower oil. $70-100/PERSON UPON REQUEST NO $50/BOTTLE
