Executive Chinese chef Mok Kit Keung is an institutio­n within the Shangri-la group, having helmed two-michelinst­arred Shang Palace in Hong Kong and now its branch in Singapore. He boasts more than 35 years of experience in traditiona­l Cantonese cuisine and is known for adding nourishing ingredient­s in his dishes, such as the steamed lobster and bird’s nest with crab coral sauce, and the sautéed boneless chicken wings skewered with abalone and mushroom.
