The chilli pomelo crab deserves all the praise it has been garnering since its introducti­on in 2013. There’s much to love about it, from the beautifull­y cooked Sri Lankan crab to its flavourful gravy, which boasts a balanced contrast of sweet and savoury flavours and just the right amount of heat, piqued by the clever addition of pomelo sacs for added tang. A similar show of skilled restraint can be found in the wok-fried Kagoshima wagyu beef and its punchy peppercorn sauce, which isn’t overpoweri­ng, allowing the tender and naturally flavourful prized beef to shine. If the weather permits, an al fresco table is recommende­d.
