This gorgeous specimen is a locally-farmed grouper from Ah Hua Kelong, which supplies Salted & Hung’s chef Drew Nocente with some of his favourite seafood to work with. It is also the star of a popular dish at the restaurant that pairs the fish with lemoncompr­essed cucumber and a smoky charcoal emulsion.
