Named after chef-owner Alain Devahive’s newborn daughter, Olivia has quietly established itself as the place to go for Barcelona staples interpreted through the Catalan lens of the chef. He spent a decade with Ferran Adrià before swapping the shores of Costa Brava for Singapore. The avocado lobster roll is a marriage of Japanese and Barcelona influences, with the lobster meat beautifully encapsulated in thin slices of avocado and topped with a lively ponzu sauce. Devahive’s take on the tubular pasta is the roasted meat canelón stuffed with braised beef cheek and doused with a hearty Parmesan cream for the oomph. For dessert, end with the creamy cheesecake, served warm with the core still moist and oozing onto the plate as you slice it open.
