Awalk through the chic entrance leads you to the spacious, soaring dining room that’s reminiscent of the colonial era. Touches of luxury are evident in the modern fittings, which include comfortable leather dining chairs. The modern Asian fare is courtesy of “Demon Chef” Alvin Leung, who helms three-michelin-starred Bo Innovation in Hong Kong. Unlike his award-winning restaurant, the techniques used here are more traditional, evident in the likes of the Australian porterhouse steak, which is simply grilled over charcoal and served with Asian-inspired condiments such as spicy hollandaise, laksa leaf chimichurri and kecap manis, and the grilled Hokkaido scallops that come with smoky adobo butter, crispy ginger and calamansi. Complementing the menu is an extensive drinks list with 16 wines by the glass, as well as an impressive cocktail selection from the bar.

The bar menu has original finds like creative cocktails such as the Explorer’s Signature, inspired by the life of Joseph Balestier, the first American consul to Singapore.
