Group executive chef Joey Sergentakis’ discovery of Asian flavours began when he moved to Hong Kong as the chef de cuisine of Café Gray Deluxe, where he was mentored by celebrated chef Gray Kunz. He built more experience working in restaurants across Asia before settling down in Singapore as Cé La Vi’s executive chef in 2017.
