Crystal Jade Dining In
At this popular restaurant, the floor-to-ceiling windows frame sea views across to Sentosa Island; it’s also a great vantage point for the nightly fireworks display. The fish maw soup with mushrooms is served in a hot stone bowl, which keeps the contents properly warm. The dish of tender san bei (threecup) chicken with fried ginger and basil is also presented in a hot stone bowl, with tempting aromas permeating the air with nuances of soy sauce, Chinese wine, sesame oil and herbs. Angel-hair pasta, imbued with fragrant truffle sauce, features morsels of shrimp and scallop. Highly recommended are the cubes of succulent pork belly with its crisp, golden, caramelised crackling—they tantalise with their sweetness and range of textures. Staff appear to genuinely enjoy being of service with their cordial manners, warm hospitality and understanding of diners’ requests.
