Crystal Jade Golden Palace
Part of the multinational Crystal Jade chain, the upscale Golden Palace is your go-to for traditional Teochew and Cantonese fare, as well as fusion dishes using non-chinese ingredients. Modern choices include rack of lamb in red wine sauce, and pasta with seafood and truffle sauce. One of the recommended dishes is the marble goby, cooked in a “milky” Teochew-style broth with leeks, radish and taucheo (fermented soybeans); it’s a unique combination that’s quite delicate. For dessert, the sugar-coated deep fried yam (a lesser-known Teochew dessert) is impressively fluffy inside and crisp outside. While the wellappointed dining hall is less frantic than a typical Chinese restaurant, the service staff bring about a more casual family atmosphere than what one might expect of a fine dining establishment. The wine list is adequate and filled with the expected labels to pair with Chinese cuisine.
