It’s easy to indulge at celebrity chef Jean-georges Vongericht­en’s Singapore restaurant given the breadth of sumptuous modern European dishes. A good way to start is with the “toasted egg yolk”, featuring buttery brioche sandwichin­g creamy egg yolks sous-vide at 63 degrees, and crowned with a dollop of caviar. It’s even better if you toss in the crispy salmon sushi, a take on the well-loved Japanese classic, where fresh fish is set atop a morsel of deep-fried rice that’s glazed in a punchy chipotle mayonnaise. Always a must-have is the popular black truffle and Fontina cheese pizza; the thin crust is generously laden with melted cheese, its sharp notes complement­ing the truffle’s earthiness. Something light and flavourful is the crisp pan-fried snapper served with zesty sweet-and-sour sauce, studded with mushrooms and tomatoes. Dessert is always a big affair, we recommend a warm chocolate cake with a gooey centre, topped with a quenelle of vanilla ice cream.
