Housed at the magnificent National Museum of Singapore, Flutes serves a modern and creative take on European gastronomy, using the freshest ingredients available. A great start to the meal is the beautifully seared scallops, accompanied by a delicious cauliflower, raisin and sherry gel that elevate the scallop’s sweetness. Also an elegant appetiser, the pan-fried foie gras comes with poached blueberries, complementing the flavours perfectly. For mains, the well-executed fillet of barramundi is served with chargrilled octopus and jamón Iberico. It’s always satisfying to end the meal with dessert, specifically chocolate fondant, with its intense flavour and creamy centre. The dish is dressed in a combination of light chocolate mousse, raspberry and pistachio. Service is immaculate and the overall dining experience is superb.
TATLER TIP
There’s an outdoor terrace cafe next to the restaurant that serves hearty bites such as ham and truffle cheese toasties; pulled pork subs with tomato, romaine and fries; and cinnamon-dusted churros with warm dark chocolate.
