Ippoh Tempura offers an interactiv­e tempura experience for the discerning diner, where each morsel of food is prepared to order. The thin and even Osaka-style batter and the use of 100 per cent safflower oil results in a lighter and fluffier tempura compared to the others on the market. One of the restaurant’s most highly rated dishes, the live prawn with shiso leaf, benefits from this light touch—the delicate balance of flavours comes alive in the mouth, making it worthy of a repeat order. The sea urchin tempura with caviar is another dish delicately prepared to show off the quality of the ingredient­s, allowing the diner to savour the many layers of textures and flavours in one bite.
