On days when he has unique in-season produce in the kitchen, be prepared to be surprised by off-menu treats that he will readily present to augment the courses on his Experienti­al Menu. The confident and capable service team, led by Robuchon alumnus Ashwan Suppiah, lends the dining room a refined air without the stuffiness.
