Located along the beachfront of Sentosa’s Palawan Beach, FOC Sentosa exudes the free spirit of a Mediterranean beach shack. Of course, the contemporary Spanish/ Mediterranean menu, designed by chef Nandu Jubany, offers a good mix of hot and chilled tapas as well as barbecued selections. Start with the sustainable bluefin tuna belly with crudités, featuring flavourful and firm cuts of fish served with vegetables and an avocado dip, and the open tortilla, which is wrapped in a delicate layer of whipped eggs, and topped with cured sausage and creamy cheese foam. A vegetarian version of the paella comes with a hearty serving of assorted vegetables tossed with fluffy Spanish rice. End the meal with the vanilla flan, a traditional Spanish dessert that sees a topping of strawberries granting an otherwise rich and creamy classic a zesty finish.
