Tucked away along a row of beautiful shophouses on Tras Street, this establishment stands out with its excellent showcase of Sicilian fare. The refreshing kingfish tartare is a marriage of perfect flavours, seasoned with a traditional anchovy sauce (colatura) and served with a refreshing lemon confit, and premium Amur River caviar. The angel-hair pasta with uni that arrives next is unctuous and rich, with fresh pieces of sea urchin and chives atop perfectly al dente pasta. For mains, the slow-roasted lamb neck is prepared perfectly pink and juicy, accompanied by a hearty Sicilian eggplant stew and roasted pumpkin purée. The highlight of the meal is the salt-baked red snapper, a theatrically scrumptious main course for two to share. The salt crust is broken open and the amazingly tender, flavourful fish is filleted and served with lemon, coriander and garlic sauce, alongside an olive salad.
