This restaurant at Intercontinental Singapore comprises two long rectangular spaces that straddle Ash & Elm. The decor is simple and unassuming, with wood prevalent on the floors, wainscotting, tables and shutter doors, while velvet enlivens the studded chairs and the chandeliers feature pretty butterfly accents. Among the highlights of the extensive menu are the juicy pork belly, a fine Peking duck, and stir-fried squid ink fish noodles where, through some culinary wizardry, the long black strands (the “noodles”) taste exactly like fishball. The miso-shoyu baked cod is a reimagined classic, where the fish is marinated in miso and shoyu, baked and garnished with Japanese mayo and miso. Wines by the glass include a fruity, fullbodied Katnook Founder’s Block Shiraz from Coonawarra and a mellow, soft Château Loumelat Cuvée JJ Lesgourgues Rouge from Bordeaux. Staff are really on top of their game—warm, efficient and quiet.
