Basked in the ethereal blue glow from a surreal scene of manta rays and other ocean life swimming by, a meal at Ocean Restaurant, set within the aquarium at Resorts World Sentosa, is undoubtedly a surreal experience. Portion sizes from the seafood-forward à la carte menu border on the small side, but the dishes make up for that in terms of taste and freshness. The grilled options are exceptional—slicked in an umami-rich harissa and chorizo-based sauce, the Fremantle octopus is perfectly cooked and full of flavour, as is the Mozambique langoustines, grilled until smoky and served on a bed of XO cream sauce. For an interesting spin on familiar flavours, consider the Chatham Island blue cod, fried with its scales on and to a golden crisp, then served in a fermented black bean emulsion.
