Impressively authentic, Punjab Grill has an unassuming ambience that may surprise the diner who expects a stuffy, high-art restaurant at Marina Bay Sands. It does, however, present the perfect backdrop for a cacophonous party—and the restaurant’s casual approach belies the highly refined execution of its dishes. Diners not keen on the gaminess of lamb should take the leap of faith here; the nalli gosht is a lamb shank that’s cooked with whole spices, infusing the meat with flavour that’s full but not overpowering. Also try the tandoori lamb chops, which are well barbecued and glazed just enough. The dum ki biryani remains a firm favourite (we recommend fish or lamb) and, if you still have enough room, don’t pass on the delicate barramundi fish tikka and the rich, tangy coastal prawn curry. The service here deserves special mention; ask the staff any questions about the dishes and you’ll get very helpful answers.
