Located on the ground floor of a heritage shophouse, this comfortable 26-seat fine-dining restaurant is where chef Jeremy Gillon, a Savoie native, has focused his menu on introducing some 40 indigenous herbs grown in the French Alps region. Gillon creates each dish to feature the distinctive trait of a selected herb, whether whole or in extract form, such as an infused oil. Dishes are meticulously composed and balanced without any elements being overwhelming. Top marks are in order for the well-seared yet tender plaice with carvi (caraway) accompanied by eggplant purée, and the slices of roasted and confit beetroot with contrasting textures. Other highlights include raw Icelandic langoustine wrapped in bok choy with a drizzle of a tart and sweet framboisier (raspberry leaf) sauce, and a well seared yet pink inside roasted pigeon with slightly herbal-tasting sapîn (pine needles) oil and beetroot jus. A good selection of wines from Savoie are available alongside other French options.
