An elegantly restrained restaurant with unparallel­ed views of Marina Bay, Saint Pierre impresses with a small, personable and efficient team that serves exquisite gourmet creations with memorable flavours. The fivecourse classic menu has plenty to excite. The appetiser of Royal Belgian oscietra caviar, leek oil and bonito is both a visual treat and a finely blended symphony of delicate ocean and farm flavours. With the Hokkaido hairy crab, corn and lemongrass course, the emphasis is on the sweet freshness of the moulded timbale of fresh crabmeat, and how well it balances with the delicate chowder of sweet corn and aromatic lemongrass.

For the main course, the marron is succulent and flavourful, pairing perfectly with two varieties of turnip, refreshing finger lime, kohlrabi and a rich glaze. Wrapping up the meal creatively, the dessert of three parfaits of Drambuie, vanilla and dark chocolate goes surprising­ly well with sweetened snow ear fungus and jellied lime rind.
