Against the minimalist decor, Shinji’s sushi chefs resemble monks with their clean, white robes and neatly shaven heads— serving in the religion of sushi at this immaculate temple. There’s only an omakase menu available, be it for lunch or dinner. You can select from three options, depending on how hungry you are, and how many pieces of sushi you’d like to have. The lunch options start with the Tsuki course (12 pieces) for $125 per person, while the most expensive dinner option goes up to $440. Each piece of sushi is created like an exquisite piece of art and the offerings are dependent on the highly seasonal ingredients (flown in from Tokyo’s Toyosu Fish Market). The entire omakase meal is a culinary journey that’s well-thought out and incredibly nuanced. If we had to pick favourites, the standouts would be the horse mackerel and the karei (flounder). However, each piece of sushi is truly top-notch, with flavours that are delicate and distinct.
