The Tunglok Signatures brand was launched over a decade ago to offer fans of the feted group of restaurants a comfortable place to enjoy traditional Chinese cuisine (Cantonese, Shanghainese and Sichuan) with a modern touch, and a menu that features premium ingredients such as foie gras, truffle, abalone and Wagyu beef. The double-boiled abalone, seafood and ham pumpkin soup, served in an edible organic Taiwanese mini-pumpkin, is as good as it looks. Signature dishes include the traditional-style baked fortune chicken (advance order required) and the steamed grouper fillet in a milky and rich chicken stock and wine broth. The fusion-style pan-seared French foie gras with a crisp slice of roast Irish duck and fruit jelly in a thin pancake, served as an individual portion, is a memorable highlight as well. While the crispy roast pork belly is excellent, the succulent and crisp skinned classic roast Irish duck is not to be missed. Service is attentive and unrushed, in a good way.
