The Singapore outpost is one of Wolfgang Zwiener’s upscale chain of 20 steakhouses around the world; he started his first restaurant in 2004 after working at the famed Peter Luger Steakhouse in New York City for decades. All the USDA Prime Black Angus steaks served are dry-aged on-site for at least 28 days to allow the protein to break down, resulting in more tender meat and deeper flavours. The porterhouse cut is served on a hot plate bubbling with melted butter. Unlike some steakhouses that can be dark, sombre spaces, the mood here is lighter and buzzy thanks to the open-plan layout. The menu offers a variety of classic American steakhouse staples including chopped salads, seafood items and side dishes. The cold seafood platter comprises a half lobster, two jumbo shrimps and crabmeat chunks, and makes for a light appetiser for two.
